This is a simple recipe for Dahi (Fresh Yogurt).


  • 4 cups of Milk (whole milk preferred)
  • 1 to 1 1/2 teaspoons of jaag (yogurt that has live cultures, too much will make it sour)


1. Bring the milk to a boil. As it begins to form bubbles on its surface, turn it off and cover. 2. Let cool to 119 degrees F or slightly warmer than room temperature. One way to check is to put a few drops on the inside of your wrist. If it feels hot, it is not cool enough. 3. Add the jaag starter and mix well 4. Cover and wrap with towel and/or blanket and put it in the oven or somewhere warm for 5-8 hours at least Keep warmer and wrap more in cold weather.
