Orange-Scented Sweet Potatoes

Ingredients

  • 6 baked sweet potatoes
  • 1/2 teaspoon grated orange rind
  • 1 teaspoon grated fresh ginger root
  • 2 1/2 tablespoons maple syrup
  • lightly toasted, chopped pecans for garnish
  • 5 tablespoons orange juice
  • 1/2 teaspoon grated lemon rind
  • pinch of ground nutmeg
  • 1/8 tsp salt (or to taste)


Directions

  • Preheat oven to 350 F
  • Peel the sweet potatoes and put them in a food processor along with the remaining ingredients
  • Process until smooth
  • Bake the puree in a casserole dish until heated through, about 15 minutes
  • Garnish with the pecans and serve hot
