Vegan Cheese Cake

Crust:

  • 16 graham cracker or equal amount of Trader Joe's Cats Cookies (crumbled)
  • 1/2 stick vegan margarine
  • 1 tablespoon light Karo syrup
  • 1 tablespoon flour
  • Mush up with fingers and press firmly into spring-form pie pan

Filling

  • 16 oz Tofutti "Cream Cheese"
  • 1/3 C fructose or sugar
  • 4 EnerG Egg Replacer "Eggs"
  • 1 teaspoon vanilla
  • Juice from one lemon

Topping

  • 15 oz Tofutti "Sour Cream"
  • 1/2 C fructose or sugar
  • 1 teaspoon vanilla
  • Blend. Pour on top of cooled filling and bake at 375 F for 5-8 minutes. Must cool at least 12 hours in refrigerator.
