Serves 3-4

Ingredients

  • cooking oil (enough to cover bottom of pan after swhirling)
  • 4 big potatoes
  • 1 tomato (diced)
  • 1/4 - 1/2 tablespoon salt add more later if necessary
  • 1/2 table spoon haldi
  • 1/2 tablespoon marsala
  • pinch of dry mehteh (optional)

NO ONIONS/TORKA NECESSARY

Method

let oil warm up
cut potatoes like thin french fries and add to pan. (cut in half long ways, then cut in thirds the same way. then stack thirds flat and slice long ways)
mix while heating and add rest of ingredients after a few minutes
add salt and tomatoes
keep mixing for about 20-30 minutes
cooked when potatoes cling together and look mashed (do not mash)
